A city of beautiful lakes, palaces and mosques, Bhopal is not only famous for its history but also for its cuisine.

This royal state of India was ruled by four Begums with great ability.

The last Nawab Begum eventually handed over the reins of government to her son who proved to be the last Nawab of Bhopal.

Like many other states, Bhopal also became a part of India and the Nawab family was granted life tenure by the Government of India.

In 1707 Dost Muhammad Khan, an Afghan chief of the Mughal army, captured and re-fortified the city of Bhoj, the seat of Raja Bhoj of the Parmar dynasty. The new city of Bhopal was founded and the Nawab period began. Since Dost Muhammad was of Afghan origin, Bhopal's early history was largely steeped in Islamic civilization and even today Bhopal still has a glimpse of Muslim society.

Shamla Kothi built on Shamla Hill by General Ubaidullah Khan in 1911 became the residence of the family at the end of the Nawabi period. In the year 1945, this house was settled by the steps of seventeen-year-old bride Begum Surya Rashid.

Shamla Kothi was spread over a wide area. The kitchen was spacious where five waiters and 15 cooks prepared various kinds of food. Each stirrup was expert in his art. Rakabadar Siraj was an expert baker and prepared delicious cakes by sealing the pot and placing it over the coals. Not small cakes, but three-tiered cakes were prepared with the same recipe.

The forest spread around the Shamla Kothi was the best hunting ground and the best occupation of the residents of the Kothi was hunting and the interesting thing was that the meat of the game was not washed in water but was cleaned with a wet cloth and the cook prepared excellent kebabs, kofta. , used to prepare and serve on the table. Excess meat was cured in the sun and used throughout the year. During the rainy season when hunting was difficult, the same meat was cooked in different ways.

Apart from meat, delicious salad dishes were also prepared there. Each salad was cooked with meat. When it was spring for seasonal vegetables, their handi was prepared in a big way.

Nawab Shah Jahan Begum invited the squires from Lucknow and the Nawab's table was decorated with Odhi food. A fusion of Oudh and Afghani cuisine gave birth to many new dishes.
